This crowd is generally more wealthy than the earlier crowd -- they've made their money and now have more time on their hands. They're used to getting out early for work, and are still interested in keeping themselves active and their minds sharp.
You'll find retired investors discussing real estate deals, stock and bond traders scanning the papers before they go to their stockbroker's office and watch the ticker board with their cronies (they actually do this), and business owners who choose to let their employees open up the offices before they saunter in around 10 a.m. to start conducting business. All in all, the 9 a.m. breakfast crowd has more business acumen and influence than the "quick grab a bite and get to the office working drone" 8:00-8:30 crowd.
